How do I reset my phone?

If I wanted to set up a new Gmail account and reset my phone which apps should I keep on my phone? How do I keep my contacts, pictures, documents, etc. I suspect someone has Spyware set up on my phone. I am not familiar with any electronic stuff so please be as specific as possible on how to do things. Thanks!

See Backing up an Android Device. Then do a factory reset (Settings/General/Backup and reset) and restore your data. (You;ll lose all the apps you've installed - go to the Play Store and install them again. (The button will say "Installed", not "Install", but it'll install the app anyway.)
