How do I wipe my Galaxy Tab clean of existing ROM?

I'm a noob to rooting & such, so looking for some help. I recently acquired a refurbished Sprint SPH-P100 Galaxy Tab 7" which apparently was previously a floor model demo at Radio Shack. It appears to have some sort of custom ROM built onto it which I can't seem to erase. The problem with this particular Radio Shack ROM is that it completely resets itself every time you power cycle the device. In other words, I can download & install a bunch of apps from the market place, but as soon as I power cycle the device, they all disappear and get completely erased (even if I try saving them to the SD card). The process of power cycling triggers a process which completely wipes the device clean (including the SD card) and resets everything back to a fresh Radio Shack ROM install. Doing a factory data reset does nothing to alleviate the issue either. It makes perfect sense to me why Radio Shack would create this custom ROM with a wipe/reset feature, particularly when you think about all the people who would've been playing with this device every single day & loading apps on it, or making changes to the wallpapers, widgets, ringtones, home screens ... etc., this custom ROM would make it very simple for the Radio Shack employees to quickly wipe & reload the device at the end of each night. This custom ROM also automatically loads their Radio Shack Google account onto the device,after each power cycle (which means I can't even load my personal Google/Gmail account onto the device as the primary Google account since they've already automatically taken that honor for themselves). In any case, I now want to completely delete this custom Radio Shack ROM and replace it with a more normal ROM which won't automatically reset itself and wipe out all of my downloaded/installed apps after each power cycle. I've tried rooting the device to android 2.3.4 EF17, thinking it would delete the old ROM & replace it with this new one, but instead the new EF17 just appears to act like more of an over-lay resting on top of the existing Radio Shack ROM. How do I completely wipe out the Radio Shack ROM (I want it clean off the device) & then replace it with something new which won't reset itself after each power cycle? Or if somebody knows how I can at least remove the "auto-wipe/reset after power cycle" feature from the existing Radio Shack ROM, then that might work as a fix also?

Unfortunatly the answer is "No" ... I've still not been able to figure this thing out. I've flashed to factory ROM multiple times via ODIN3, but to no avail ... the tablet still boots up to this custom Radio Shack ROM each time. I'm mind boggled at this point.
