How to deal with no Developer menu

I guess it's no surprise to anyone that there is no longer a developer menu under settings after the 8.1 update. I searched and here and didn't find any discussions on the topic. I was just wondering how to deal with not being able, for example, to turn on USB Debugging. Won't that make some apps like Vysor non functional?

Google giveth and Google taketh away. It just seems like lately there's been more take then give. In Android 7 and earlier, using multiple Android Assistants was no problem. But with 8, if I make Cortana my default, I can't even access the Google Assistant.

Is this a " I'm taking my ball and going home" thing or am I missing the workarounds to these changes?

Which phone are you talking about? My Pixel 2 XL on 8.1 still has Developer Options.
