How to define new keyboard

I've done this before numerous times but am puzzled by this Android 11 phone, Oukitel W15.
Under languages and input / Onscreen keyboard, I get several choices but it's impossible to define the primary keyboard. Even when going into the "Manage on-screen keyboards", there is no way to designate a keyboard as primary. I like Big buttons keyboard and it does show up there but the primary stays this "Gboard" with no way to turn it off.

Can you show us a screenshot of that selection menu?

Also, I couldn't help but think "I like Big Buttons and I cannot lie"
