I just got a 6a. When I charge overnight how do I stop the phone from charging at a certain % let's say 80%

Adaptive Charging is the only way to modify the charging. There is no way to set it to stop at a specific level. The best you can do right now is install an app like AccuBattery and have that give a notification when the phone has reached the level you choose -- then it's up to you to unplug the phone from the charger.
