How to recover deleted SMS with only SIM?

How can I recover SMS that may or may not be saved to a SIM card that I have still (just a few days ago I deleted them when I had to turn my phone back in), that were deleted while in an S7 (which I no longer have).

I am now using an S6, and have a macbook.

I am not sure where the texts were being saved to while using the S7, it would have been whatever the default was - I didn't change anything from factory setting.

The S6 I have is unlocked but not rooted, although I am thinking about doing that (would need to backup a bunch of pics to macbook or flash drive first).

I know that when I transfer my SIM to my other phone (which is an exact duplicate of my everyday phone) the only messages it shows are those made on that phone and not the phone the SIM was in previously.
 
Unless your network provider stores the messages, you may be out of luck here..

Not "are", "used to be" - before smartphones. There was no other place to store things on them.

When I put the SIM in the S6, I am able to check voicemails from when I was using S7.
Voicemails are stored on the voicemail server - something owned by your carrier - and go with the phone number, not the SIM. If you bought another SIM and had your account moved to the new one, you'd still be able to check your old voicemails.
