i don't plan on swapping tha card that much anyway. Maybe I will upgrade to a bigger card if they figure out how to remove the compression on the Evo's rear camera. It's going to eat through 8 Gigs in a hurry.

I'm new to Android, I have a 16 gb microSD just waiting for Friday. Question: When I swap the 8 gb for the 16, will I have to do anything special, like format it? Or will I get prompted to do that as soon as the Evo recognizes it?

You will be able to do that from the phone. I have no idea what format Android can read but it's based off of Linux so I am assuming Fat32.
