Harware Version: I605.06

How do I disable the OTA update?
I cant seem to find this info in any place except for ""IF" I was already rooted. Which I am not...
I want too but that is a different thread.

Well, until or unless you root your device you just can't stop the update i am sure you can postponed it for a while but soon it will be forced over to your device. So, until or unless you are a rooted user you can't stop the updates.. i.e. You must update your device.

Yup, the only sure way to prevent an OTA update requires root access and disabling a couple files.
