Yep! You have a custom recovery installed. Now we can root. Download SuperSU:

edit- never mind I had a box to accept on the Htc One an now im in the Recovery screen

Do I need to do a backup of anything on the phone itself just in case? Saw someone do that in a video the other day but wasn't sure

Not yet. Go to install, look for the SuperSU.zip, select it, and swipe to confirm flash. Once it flashes successfully, reboot the phone. If the recovery freezes for a little bit, don't freak out. It'll reboot in a couple of seconds.

Check your app drawer, you should see SuperSU. If you do, it means you are officially rooted!
