If an HTC One phone runs the cyanogenmod instead of the pre-installed packages that come with the phone, does this mean that HTC's image stabilization and the "UltraPixel" software will also be wiped?

What exactly is UltraPixel? Is it just hardware? If it's hardware, then the camera features aren't totally lost then?

CM will not affect the camera. "Ultra Pixel" is HTC's marketing name for a camera which is not focused on megapixels (which effectively translates simply to how big of a picture you could print - will you ever really print a poster-sized picture?), but on the ability of the camera to pull in light in low light situations.

However, you need to wait for CM to develop a relatively stable, working ROM. I believe, as of yesterday, the camera was not yet working, in addition to other early build issues.

It isn't just about printing. It's about how much data is captured.

You guys are forgetting about the image sense 2 chip that this phone has. That is propriety tech. Meaning source to utilize it isn't included meaning camera performance will degrade
