htc vivid with ics 4.0.3 data limit and running applications?

So I just got my new HTC vivid this week, its with stock ICS already on it, version 4.0.3 with HTC sense version 3.6, I'm seriously considering switching phones because of all the problems I'm already having, Im New to android so bare with me, I have a lot of running applications that start themselves whenever I start my phone and when I disable them in the "running applications" folder under the settings app, it just comes back and starts running again by itself, I tried to uninstall some of the applications but it only gives me the choice of disabling it, but apparently it doesn't work because the apps will show That its runnin still after a little time goes by after disabling it, so how can I go about stopping the apps from auto-starting? Which apps should and shouldn't be deleted? Also, I think the constantly running apps are making my data usage go through the roof and then some, I've received messages from AT&T saying I'm being billed $15 extra bcause I went over my data plan, in 4 days I've went over 3 times with little use of my phone, if not the apps then what? I also got a 5 second or so lag now for exiting any app and when I go to the homescreen but it wasn't like this when I first got it, I reset my phone to the factory settings so is that where I messed up? If not then what do you think?
 
First off, the carriers (ATT) add a certain amount of crap on the phone we lovingly call bloatware. Most of this crud cannot be uninstalled or really disabled. Everytime you reboot they will start back up.

Now do not let me discourage you, you can do something about it. You can root your phone, which will then give you the ability to get rid of anything on there. If you remove the HTC stuff, you will lose your widgets.

On to your data issue. You can automatically disable auto sync and background sync. by hitting the menu key, then going to accounts and sync.

you also might want to check the widgets you have set up and have them update more infrequently.

You definitely helped me haha thanks, and I've disabled the apps you named off and the updates less frequently, but I still use a lot of data, a large amount of data, and now my phone says "android.process.media has stopped unexpectedly. Would u like to tell htc?" I can't look at downloads of media, pictures, videos, anything media related, wat can I do about this and p.s. I haven't rooted yet, will it fix when rooted?
