The "album" name is the name of the last folder - so if some pictures are in DCIM/Camera/Vacations/May 2015, they'll be in an album named May 2015.

Just figure out a naming scheme that works for you, use a file manager to create folders according to that scheme (DCIM stands for Digital Camera IMages, so try to keep all your pictures there, and all the ones you took with the phone in DCIM/Camera - just so whatever scheme you come up with is sane. Putting pictures in some subfolder of Music will work (the phone doesn't care), but it doesn't make much sense.
