I need help. Back up?

I going to try rooting my phone for the first time and adding roms. As far as backing up the phone how would I go about restoring my epic to its current status. Btw I'll be following qbking's video instructions on rooting with out the use of a pc.

I have google for contacts and an app to restore my text messages and an app to redownload a list of all current apps installed. what else would I need to back up and what would I use.
