If i have apps on SD card, can I switch to a new SD by just copying and pasting them over, or do I have to move it all back to the "device storage"?

To be on the safe side, I would revert everything back to device storage, and do it all over again for the new card.

I think you are correct because im using the built in function on my phone to do it via applications manager.

Doesn't that put it in an .android_secure folder that can't be seen when plugging in via USB to computer to copy and paste from?

I think you are right. However, I don't think it's going to be as simple as that. I could very well be wrong, and I can't explain why, I just have a feeling you would be much better off going the route of reverting then doing it all over.

I tried that once; for the most part it did not work. Most apps installed to the SD card retain some kernel in internal memory.

It was ultimately faster to just reinstall everything from playstore.
