Oh my god! 4 F'in hours later.... I finally have Froyo goodness!! Now, can I restore my apps & settings from the nandroid backup I did in step #3??

If you did a nandroid backup of the 2.1, a nandroid recovery will restore that 2.1 system.

Suck it up and re-enter your settings. Then get Titanium Backup from the market and use that to restore your settings in the future.

Then nandroid backup is used to restore your phone to its previous settings if you bork a ROM flash or something.

You making a completely stock rom or a frankenrom?
