my phone does that too. I haven't even activated the SIM yet how can I actually have 4G available?

Strange that is happening with your phone. When I'm on Wi-Fi my 4G LTE symbol disappears.

When WiFi is ON, DATA thru the carrier will not be used.

You can tell when DATA is working by watching for the Up/Dn arrows blinking. If they are absent, DATA is OFF or not being used.

MMS uses your phone's data... not wifi.

No you're fine as long as you're connected to WiFi. The data will go through that.

Majority of the time this is true but there are exceptions depending on carrier (such as T-Mobile and Sprint Wi-Fi Calling Features).
