Then try doing a factory reset under 'Gear Info' in your settings menu.

Had a weird bug where the Always On mode and the S-Voice Wake Up weren't playing nice together and the screen wouldn't always shut off properly. Factory reset fixed it right up.
 
Yes I had a bug where the screen basically did not time out unless I had the gesture control turned on. It fixed it, however I have the always on display ticked to ON, and there are times where it doesn't activate. Very weird. I'm patiently awaiting an update or two before my 30 day return period is up.

If I understand correctly this isn't a bug. Probably just means you're wearing your watch a little loose. The always on mode will go all black if the watch doesn't detect your wrist. Battery saving feature I guess. To test it, just take your watch off your wrist and set it on a table. The always on watchface will go black after some time.
 
I also find that even while wearing snuggly, the ambient screen turns off if I lay on the couch without moving for an extended period. Anyone else seeing this? May be intentional to conserve battery...
