I as well use this on my computer at home that is hooked up to my home office server. Would I be able to get access to my conversations via the server, or are they stored on a cloud type server?

Does anyone have any knowledge about this?

That would be a great question to ask the developer of whichever app you're using; try looking through the FAQ (if they have one) or just send an email.
