Can I have multiple NAND backups and use them to restore to different ROM setups? Or does the most current backup overwrite the others?

I'm just wondering because I want to try out different ROM's but I'm not sure what the best way to do that is. I'm currently using Cyanogen RC1 but wouldn't mind trying out some others (maybe DamageControl) to see if I like them more.

You can have mulltiple.
A good way to see your nand backups is to get "Rom Manager"...

And go to manage and restore backups... and you can check out your backups and rename them and whatnot.

After spending two hours on two different nights I finally got simple root to work. :) I still don't know what I was doing wrong. Now I'm ready to try out all of these awesome ROM's!

Kedar that's exactly what I was looking for.

Can I also create backups using ROM Manager?

yup, if you have nand unlocked, rom manager can make backups for you. (they end up being nand's just in a different directory)

You can also see a list of them under "manage recoveries"
