Is there anyway to make them as a default player?

You might try going into the file browser and opening a music file. You should be asked which app you want to open that file in and there should be a check box at the bottom of that window to make the selected app the defualt for the file type. You can reset the app default settings by going into the manage applications menu. From there select the app and there should be an option to reset the app defaults.

I'm new to the Droids, where is the stop function on the Stock Music App?

It's pretty good except when it crashes. Also a little slow(when you have a lot of music!
