Everytime i try to update my Samsung Galaxy Note 3, i get message saying it has the latest software. I have been googling this to see it that is true and i keep on reading that lollipop Android 5.0 is the latest update...Why is it that my phone don't know that?

1) if you check less than 24 hours after you last checked, you'll get that message whether there's an update or not.
2) Which carrier is it on?
3) You can manually update it - see Walter's [Rooted OR Stock] Update Procedure For Lolli… | AT&T Samsung Galaxy Note 3 | XDA Forums if it's an AT&T phone. If it's something else, look around the appropriate forum on XDA or join and post a question in that forum - I'm sure updates have been posted for other carriers. (Or you could just flash the appropriate Lollipop ROM, but since that wipes your phone, you'd have to back everything up first, then restore it all after flashing.)
