You have to mount /system read write. If you are rooted, ES file explorer can do it. Look under options.

I'm in the same boat.
I am trying to do this on my rooted Nook Color. It's stock 1.2 after using manual Rooter. The problem is that apparently my File System is set to Read Only for some reason so I can't edit the build.prop file.
Update: OK. Absolute System Root Tools does the trick for me. I can successfully edit the build.prop file. However, after rebooting, NetFlix still says it's not enabled for my device.
I've edited both ro.product.model=Nexus S and ro.product.manufacturer=samsung to no avail.
Just tried ro.product.model=HTC Vision and ro.product.manufacturer=HTC. Success!!
Update: Well, sort of. I get a black screen that appears to be playing the video, but no actual video.

I figured out what the issue was, I had cm-7 nightly 75 on my nook. I redid it with cm-7 nightly 72 (found info on another forum) and used Vision and HTC. It is streaming perfectly and no chipmunks!!!
Edit the build.prop. Change ro.product.model to Nexus S, and change ro.product.manufacturer to samsung. Note the small "s" in samsung. This works great on my Nook Color running CM7 from the SD card. Courtesy of XDA.
@Robert, I had the black screen too. I reverted back to nightly 72 and now I have Netflix and YouTube streaming perfectly. Also, I used Vision and HTC. It did not effect any other programs.

I am having issues with es file explorer. I can't save the changes I made in build.prop (I get an error message when I try to save/exit). also, when I try to check the mount file system box in the root options, a message pops up saying that it failed to mount. are these issues related? And is there a way to fix this??? Any help would be greatly appreciated. Thanks!
