A lot of issues with ota's can be remedied by doing a simple wipe partition cache. It is simple to do also.
Power off your phone.
Hold volume up, home key, and power at same time and release all when you see recovery booting in top left.
When recovery opens use your volume button to scroll down to wipe partition cache.
Hit power button to select it.
When that is done just hit power button and it will reboot then.

PS. While I'm there I usually do it twice for good measure.

Can you expand on what this will wipe besides the update please? My in laws just got updated in the middle of the night and d\funny enough now the email zoom is broken and they cant read emails when they try to zoom anymore. I would like to just remove the update for them as the verizon reps werent helpful. Thanks, any help is appreciated!

Wiping cache will not remove the update. It is like deleting "temp" files in windows. It does not harm anything. But it does help correct the issues you are having.
