Newbie to Jelly Bean Needs Help with Sync Settings

I just got a Galaxy Note 10.1. I do not see a menu for accounts to change the sync settings for each account. According to the manual and searches I am looking for Accounts and Sync but there is no such setting. There is a setting for Google - Press that and I get my account - press the account and I get a list of what it syncs and no check boxes to change to enable or disable them. A long press on the account does nothing but bring up the same screen. All that is on the top is "Remove Account" and "Sync All" - no menu option. What am I missing? How is this done?

Google stuff either syncs or it doesn't, there's no timeframe involved.

Took me 3 hours of googling, but i found the place to turn it on: settings-datausage-menu (left bottom button) -sync all. Now the check boxes are under accounts like before.

Thank you for this info. I can't believe how hard they made it to find Accounts & Sync to finally be able to select which accounts, calendars, contacts etc to sync or not.
