I faced the same scenario - enrolled in beta, immediately got Nougat, un-enrolled, no sept. or oct security updates. I had to re-enroll in the beta program and immediately received the oct. security update, then un-enrolled again. Must be some way to break this cycle......
Although, now I'm considering re-enrolling again to get 7.1.
I chatted with Google support (using the Support tab in the Settings app in 7.1.1) and they said that if I unenroll from the 7.1.1 Developer Preview I would be returned to 7.0 but that it wouldn't wipe my device. YMMV.If I get 7.1 preview and unenroll will my be phone wiped out?

I'm considering going to 7.1.1 too, given some of my 7.0 issues, but I'm wondering similar, if at RTM I'll just be able to un-enroll and get the final, or if I'll have to reset?
I saw all the chatter about this, leading to 7.0, I don't suppose anyone has some solid indication that it'll go similarly?
Edit: I read the 7.1 EULA document, and it definitely says you'll just transition into RTM, so I'm taking the plunge. Took all of maybe 2 minutes to download, rebooting now, everything crossed... ;-]

Well it's a good thing you haven't tried it. Because I had nothing better to do (and, frankly, because I don't trust support in matters like this) I went ahead and unenrolled from the 7.1.1 Developer Preview (after making a current backup of course). I was immediately presented withdon't want to risk my phone being wiped out. Don't have time to backup, restore, etc
