It's on by default. I haven't had any issues with it, although in the early days of the Lollipop rollout, some people found that YouTube problems resolved after unchecking Nuplayer. It's weird that they would have it on by default, even though it's described as "experimental."

it's not on by default on my note 4 though

Oh, sorry! It's on by default on the Nexus 5 and Nexus 7. Can't really speak for other devices, then ...
