My dad is 83 and has the S7 Edge as do I.

He wants to be able to send a text message by using OK Google.

For some reason when he asks it to send a message to me it offers up loads of different phone numbers.

He is hard of hearing and eyesight not crystal clear so this is an added complication.

I have tried deleting myself and adding myself back with just my mobile number in the contacts, but the phone STILL offers up my home number and several work numbers. Where is it getting these from?

How can I get it so when he says "OK Google, send text message to My name" it will be waiting for the message not asking for clarification about number.

If I try the same from my phone straight away it says "Sure, what's the message"

I would go into the Phone, Contacts and whatever you're using for texting. Go to Settings, Apps, All and find each of those. Do a force stop, then clear cache and clear data. Exit from settings and reboot the phone. You (hopefully) should need to add yourself to Contacts again.

I would also ensure that the contact number that you want him to able to use is set as the default number.
