Questions about rooting and custom roms

So long story short, I've gone through a lot of android phones over the past couple years because I've not been completely satisfied with them. I have a S8+ now, and while it's great in a lot of ways, the renowned Samsung sluggishness is making me want a V30 or Pixel 2 instead.

I realize now what I really want in a phone is basically something with The S8+'s or V30's hardware, with OnePlus' ridiculously well optimized software. Which leads me to rooting, but I am left with a bunch of questions I haven't really seen fully fleshed out anywhere:

1. Can I get a Custom ROM for the S8+ or V30 (which I'm considering buying) that's as optimized as legitimately pure android?

2. Are there any features or options that would be limited due to rooting? I remember years ago when I used a rooted device once, things like Netflix or whatever wouldn't work because the app could tell it was a rooted device.

3. I know rooting voids the warranty and insurance and all of that, but is there any way to restore my phone to it's original factory settings and OS so I could successfully resell the phone eventually? Or would it always be kind of "marked" by being rooted at one time?

4. I see there's a ton of various custom ROMs available for the S8+ currently. Is there one custom rom creator that's kind of viewed as the gold standard of custom roms? Is it LineageOS?
