I have restored my phone to stock Android 2.2.2 and unrooted my phone but the Xiona Customer Recovery menu remains and its stopping me from installing the new official gingerbread update. How do I remove this Customer Recovery?

Do you plan on rooting ZVH? If you do you will need to be rooted first on ZVD and then revert to v9 stock recovery.

sent from my CM7/Reborn w/ 1 Gb internal storage Optimus S

Always happy to help, hit that thanks button if I did

You don't need to be rooted on ZVD. You can be rooted on any version. You just need root to flash the V9 recovery, which requier root. That is why you can be on any version of the rom (since up to ZVD they are all directly rootable) The ZVH update itself doesn't care what version of the ROM you are running. You can even be running CM7. That's not the case with every OTA update, just this one.
