S10- Why does UHD look terrible? Bad quality videos

Hello, I have just purchased a Samung S10, overall I'm pretty pleased with it, but the videos I uploaded from my S7 look much sharper and with better contrast in 1080p. I could never take a decent screenshot from the S10 in the same mode! I tried to film in 4K/UHD and immediately turned it off, it was terrible... it honestly looked like 240p when I zoomed in, and still looked bad fully zoomed out. This is in full daylight too, so seemingly perfect filming conditions.

What on earth am I doing wrong? I can't see any option to change the settings, or have I got a dodgy handset? I also found 4K terrible on my S7, so it seems completely bizarre that the "higher" the video spec, the worse it looks.
