S6 Edge Drawing on a Photo in Gallery

Hi, I am so unbelievably frustrated with my new S6 Edge. I know they cleaned up Touchwiz but it seems like they took away so many important features! Someone please explain to me how I can simply draw on my gallery pictures, without having to download some stupid app. (This was possible on S5).

Also I want to sort my app drawer alphabetically and I can't. I don't have the a-z button on my version of S6! (Rogers carrier in Canada) what do I do?!

Have never owned a Galaxy before now but would love to know how to write on my gallery pictures. For me, on my S6 Edge, I can alphabetize my apps on the top right of the home screen (Edit should appear to the right of it).....
