As for "rolling back" an update, you can't. The update doesn't "add on" to the old version, it replaces it. You can flash Oreo, but you lose anything you've done to the phone (downloads, app installations, pictures, music, etc.), so you have to back everything up first, then restore it when you're back to Oreo. (And the phone will eventually update anyay unless you root it and freeze the update app - in which case, you won't be getting all the security patches.)
