Hi in order to keep the phone up to date, I'm using Google Play exclusively.

I removed or hided every Samsung app possible since I have 0 need for those, except the file browser...

Although I have a registered Samsung account as well, I found out that opening Galaxy Store to keep the file browser or software I cannot remove up to date, it wants me to accept crazy terms. The terms clearly add a major invasion (in addition to google play terms which are bad enough) saying that Samsung will track across apps (and that includes all apps installed). I do not want Samsung to do that.

Whats your thoughts?

Delete your Samsung account from your device and stay away from Samsung Galaxy Store if you want to. In my experience, the core Samsung Apps (and I think Samsung File Manager also but I am not 100% sure) will eventually update via pushes from Play Store. However, even with no Samsung account the device isn't going to be fully free from Samsung. When my device last did an OS/UI update for example, the "updater" also forced for some Samsung App updates, from basically the Samsung Galaxy Store/Servers, and the need to accept terms and conditions in order to proceed.

With no Samsung account on the device, it seems that most Samsung apps (or maybe the Samsung OS itself) will still call home and check if app updates are available. For example, in most Samsung apps the little notification dot will eventually show up within the app's settings or it's about, and then permit for an update to be retrieved/installed (pretty sure from the Galaxy Store and separate from Play Store), even if the device is not signed into Galaxy Store with a Samsung account.

If it feels better to do things that way and avoid having to click/accept certain undesirable terms and conditions for the Galaxy Store app, then there doesn't seem to be a massive downside to doing such (other than missing out on the integrated functionality and view for managing awareness and installation of Samsung app updates that Galaxy Store (like Play Store) provides). I doubt such would actually be avoiding acceptance of certain terms since there are terms indicating that use of the apps themselves means certain terms have been accepted. However, maybe it could help to prevent the Galaxy Store app from doing certain things.
