When we take screenshot in Samsung mobiles or in any other mobiles at screenshot taking time screenshot are saving our notifications or any other messages showing or passwords etc. on top with saving screenshot message showing in attached picture?

Whatever is on your when when you take the screenshot will be saved, for better or worse. So make sure no sensitive data is shown, or has a photo editor to crop/cover up anything that you don't want others to see and delete the original.
 
With Android 11, if you take a screenshot using the option in the App Overview screen, it won't include the status bar.

Some sensitive apps (like banking apps) prevent the user from taking screenshots. Pretty much any decently designed app or website will not show your password -- it'll be dots or asterisks (unless there's an option to show password, so that's up to you to be aware of).
 
Take screenshots with caution. Like others said, crop when necessary, especially when posting to social media. Once it's on the Internet, it's long gone.
