Android One isn't stock Android, it's stock (or modified) Android One, a cut-down version of Android for phones with lower specs. (I don't know why Nokia chose One for the phone, full Android will run fine on a Snapdragon 660 with 64GB of storage and 4GB of RAM.) One doesn't encrypt the SD card. (And no, you can't just flash stock Android to the phone - you'd need a Nokia 7 Plus version of stock Android - and that would be supplied by Nokia.)

You're not thinking of Android Go, are you? As far as I know, Android One is basically stock Android.
