I'm happy with the fingerprint reader, but lately during runs/ frequently entering phone it gets old having to use the fingerprint scanner.

About the only things I'd be nervous if the phone was in the wrong hands would be photos, evernote, gmail and Google drive.

Is there a way to require security only for certain apps?

If you use Knox you can. You can set up a 'secure' portion and have that protected under a password or fingerprint (not sure on the latter, but don't see why not) alongside the 'public' side of your phone.
