My device is a Samsung S9+. I've disabled the chrome browser, and have been using the Samsung browser with duckduckgo as my search engine and not logged into said google account through Samsung browser. I was under the impression that this would stop google from collecting my search history. I don't use gmail.

Last night, I searched for the year anchorman came out and this morning, it's in my youtube feed for a related story. This has happened too often in google news app and the youtube app to be coincidence as specific search items appear in later google app suggestions. How is google getting data from a different browser, not logged in through that browser and not using their search engine? How to stop it?

Ad trackers work in all web browsers since all web browsers support cookies and pixel trackers.

There are "opt-out" options for stopping "personalized" ads, but that just results in you getting generic ads.
