Swapping SIM

I have a Nexus 5x with 16Gb of memory. I'm getting a slightly used Nexus 5x with 32Gb of memory. Can I simply take the SIM card out of my 16Gb Nexus and put it in the new one and have it work with the same phone number?

Then I would do a factory reset and restore my back up from Google. Question: will the SIM card carry the OS information so that the reset puts me on Android 7.1.1 beta or not?

I'm obviously not clear on what I'm doing.
 
Another question. When I take the SIM from Nexus 5x A and put it in Nexus 5x B, can I then exchange data--photos and contacts--via NFC or does there need to be a SIM card for NFC to work?

No it should already have the NFC capability in the phone so shouldn't require a sim card. You should be able to just exchange whatever data you require.
