I am trying to learn my way around the phone and see all it has to offer. Any tips/tricks/apps etc? Advice is much appreciated! :D

-First, welcome! I came from a Blackberry as well.
-Complete the Swpe keyboard tutorial. It takes a modest amount of practice but once you get used to it, you'll be delighted by how efficiently you can input text, which will largely determine whether this phone is one you can actually live with--especially if your BB had a physical keyboard.
-Have fun w/the Android Market but be aware of the permissions you're granting while installing.
-Give your Touchwiz launcher a chance. If you don't like it, get LauncherPro or ADW.
-Read-up on LauncherPro plus, consider upgrading. The developer is great, and updates often.
-Read up on rooting if you have the courage and want to get rid of/hide bundled apps. It's not difficult, but it's not without risks.

This should get you started well on your way. Enthusiasts (folks who lurks/post in forums) are turning purple in anticipation of the 2.2 ("Froyo") update but honestly, coming from a Blackberry Curve 8330 running BB OS 4.2, this device blows my mind even on its current software build (2.1 "Eclair"). There's certainly still room for improvement (particularly on Samsung and Verizon's part), and the new gmail app will be nice, but it's already a superb device imo. Have fun!

Put appbrain.com on your computer and appbrain from the market on your phone...you can always go to you tube and find video on your phone apps, tips, tricks, rooting/unrooting etc, etc.

My advice is just to search these forums for apps people like and also places like appwant.com or appbrain.com to see what is popular and highly rated.

Thanks for the advice so far! I have 2 questions.

1) how can I delete a shortcut to app that I have added to one of the home screens?

2) i used backup assistant to move over my contacts from my bb. If I have contacts that had more than one number, only the first one shows up?

Just jumped off the BB bandwagon as well.. Love this phone! See ya Storm.

Answers:

Put your finger on the short cut and wait till a 'trash can' pops up at the bottom of the screen. Drag and drop in the trash... that will get it off the screen.

I had the same issue with syncing with 'Backup Assistant' - Had to bail and go with Google sync. This was not a good "one size fits all apps."

Rock on!
