When I send a text it says "sent from full name" am I the only one that can see this. Or can the person receving the text see my full name as well?

Text message (SMS protocol) sends only your phone# and the message content. If the recipient has you as a contact (or has some app that will lookup your phone# to find your name), it will show your name. Else, only your number.
