Had the same problem with the equal sign.

The only answer we had to get around it was to use S-Voice to put in that symbol. Luckily it was just for a wi-fi key.

Speaking of the keyboard, hasn't anyone change the setting to GEAR QWERTY keyboard. That thing rocks for predictive text. I might start using that compared to swipe.

You can use "text templates" for all missing signs. Open "Samsung Gear" app on your smartphone, Settings, Edit Text Templates, and add a new template for each missing sign.
