I ordered the Fire HD 10 Plus. It hasn't arrived yet, but I'm uncertain if I want to leave it stock or download the Fire Tool box and switch to Google Play setup.
My main use is to watch NETFLIX, Prime, HULU, Disney Plus and youtube in the garage.
Also, is there a way to control the Fire tablet from my phone, like a TV remote control?

Maybe you've already made up your mind, but I'll give you some options anyway.
First of all, the Amazon App Store has all of the streaming services apps you listed. And they are regularly updated (unlike most other apps that seem to just die of neglect in that store - there are many very old apps that haven't been updated in years). HBO Max, Paramount+, and now even Peacock are all available.
Except YouTube. While Amazon finally allowed YouTube on the Fire TV products, it still isn't available for the tablets. You can use the YouTube site through the Silk Browser if you want. It plays fine through the browser.
The Fire Toolbox is a great tool.
From that tool, you can install one of several YouTube client apps.
IF you still want to add the Google Play Store, with Fire Toolbox, you can. I've used it to add Google Play to my HD8. Works great. You don't even need to deal with any other options if all you want is Google Play. Leave stuff like disabling apps or updates alone and only install Google Play Services and Store, and you'll be fine.
Oh, and you can install the real YouTube app from Google Play once that's all done.
