Glad to see that you're enjoying your phone. I'm "almost 50" and have had an Android since they first appeared on VZW, I tried a 6 month stint with the 4S but came running back to Android and have no desire at all to go back to iOS. I'm going to be getting the Moto X at the Cyber Monday sale tomorrow and can't wait. My GS3 is getting a bit long in the tooth.
It might be a bit too early to root but that time will come. As for the Nova launcher, I believe there is a setting to import your current launcher settings to the Nova launcher so it will appear just like the stock launcher was set up. You can also save and restore settings with Nova.
As for videos, a lot of apps in Google Play have how-to videos in their description. That's a great place to start.
