Transferring data

I'm going to be switching to the S10+ soon and wanted to know if I would be able to transfer some apps but not others. I have the Samsung Smart Switch app that I used when I transfered data and apps from my Verizon Moto Z phone to the S8. Two apps in particular that I'm not wanting to transfer over are android auto and Google maps. I'd like to have a fresh start with those apps.

Will game data transfer over? I have some notes in the color note app. Is there a way to transfer those over?
 
I was impressed with Smart Switch. Had never used it. Combined with restoring my apps from my Google account it is the first time everything, including home screen set up and all settings, transferred.
if you don't want those apps, delete them from your old phone before using SS
 
Smart Switch will allow you to select which apps to move. Click the blue link below the circle and a window will open allowing you to choose what to bring over.

I find Smart Switch lacking and prefer not to use it. For instance if you allow Smart Switch to move your SMS, it won't move your MMS photos, etc. Annoying.

I'd recommend using Google account to restore data and SMS backup and restore (app} in Playstore to move SMS and call logs.
 
When using Smart Switch, it doesn't transfer app data. It will install the app, and if you select it to do so, it will place it on your home screen where you had it on you old phone. But you have to open the app and set it up. So basically it is a fresh install.
