My Samsung S3 camera is not working due too water damage. I have decided to live without the camera. Now the problem is the "mm-qcamera-daemon" is draining my battery. How to uninstall the camera to get rid of this daemon?

Unless your phone is rooted, you can't delete the Camera app. AND even if you were rooted, I'd be careful since the camera app may have further drivers that would impact ANY camera app in your phone (even if you're not gonna use it).

Have you tried clearing the Camera's data/cache? If you boot your phone in Safe Mode, does the daemon process still shows up as the top battery drainer?

I have tried clearing the cache but no benefit. Even after booting the phone in safe mode "mm-qcamera-deamon" is the top battery drainer.
