If I unlock my boot loader on my Verizon Nexus will it make me get the updates for Android directly from Google or will I still have to wait for Verizon to release it?

You will still have to wait for Verizon to approve any updates for the device. Unlocking the bootloader will, of course, unlock the bootloader, and doing so will erase all data on the device.

If your device is unlocked, you would be able to sideload an update. Although the update would have to be compatible with the model of your device. I did this when the latest version of Jellybean was available for my Vzn GNexus. I was able to download it directly from Google when it was available and sideloaded it to my device. It became available about 2 weeks before Verizon released the OTA update.

yes, unlocking wipes your device. I sync my pictures/contacts and app setting to the cloud through my google account. However, to backup your text messages you need to use an app. I don't need to save my text messages so I don't know which apps would be good for that.
 
What about backing up apps themselves to the computer? Is it possible to pull the APK files from the phone when connected by USB?

Ask on the rooting and roming and hacking forum. They would know. However, if this has anything to do with pirating, then it is best not asked here.
