Voice to Text on my S25 Ultra is much worse then it was on my Pixel. These things seem to happen to often: queuing up and not registering anything I say, not getting 1 word in a sentence correct. Sometimes Its so wrong it's kind of impressive. On my Pixel 7pro it was near flawless. Sometimes I have trouble with voice searching as well, which maybe doesn't have anything to do with GBoard.
Is there anything I can do? or is that just the difference having a Samsung or Pixel

Yeah on the Pixel it's exclusive with voice to text it uses I believe Gemini where on Samsung it's standard , it's just like you can download the Pixel phone app on Samsung but you don't get the feature like pixels with assistant call screen.

Additionally, what have you tried to improve this condition? Tried it in a quiet place, tried clearing the Assistant app cache, tried restarting the phone, have you tried anything?

Have you retrained your voice model since the move to the new device? You shouldn't have to but it's one of those things that it wouldn't hurt to do/try anyway. To do this follow these steps.
Steps to retrain your voice model
  1. Open the Google app. You can find this app on your phone's home screen, in the app drawer, or by searching for "Google".
  2. Tap your profile icon in the top-right corner of the screen.
  3. Go to Settings.
  4. Tap on Google Assistant.
  5. In the list of settings, find and tap Hey Google & Voice Match.
  6. Tap Retrain Voice Model. In some versions of the app, this option may be under "Voice Model" or "Teach your Assistant your voice again".
  7. Follow the on-screen prompts. You will be asked to say "Hey Google" and "Ok Google" a couple of times to record and reset your voice model.
If that didn't help here are some troubleshooting steps.

If you can't find the retrain option or are still having issues, try these fixes:
  • Clear the Google app's cache and data. This can often resolve issues with corrupted voice model data. To do this, go to Settings > Apps > Google > Storage & cache, then select Clear cache and Clear data. You will need to set up Voice Match again after clearing the data.
  • Check for app updates. Make sure the Google app is updated to the latest version via the Google Play Store.
  • Ensure Voice Match is enabled. In the Google Assistant settings, make sure the "Hey Google" toggle is switched on.
mustang7757 mentioned Gemini, are you using Gemini assistant or still hanging on to Google Assistant assistant? I thought I heard that the S25s come defaulted to Gemini but if not here is how to change to it, or away from it if you think that is the problem. Just be aware that big A Assistant is being knocked off by Google and replaced with Gemini if you decide to try regular Assistant.

How to switch to Gemini
  1. Open the phone's Settings app.
  2. Go to Apps, then Choose default apps, and tap Digital assistant app.
  3. Tap Digital assistant app again.
  4. Choose Gemini from the list of available assistants.
  5. Follow any on-screen instructions to finish the setup.
