For apps, try Helium. You might need the paid version. Pictures you can just back up on your PC. Contacts you can back up to your gmail.

Loaded SuperSU...No Problem, And Rooted It ...No Problem...I dont Have CID 111111111..Why...?

Waiting to Get S-Off

It now Says Tampered and Unlocked Though...

This is the One XL thread... but anyways, you don't need CID 11111111 for the HTC One. CID 11111111 on the One XL is only used to unlock the bootloader. For S-OFF you need different software on the One. What version is your hboot?

There are plenty of stock ROMs that run good. Check out TeamEOS ROM on XDA. It's in the Original Android Development section.
