Verizon/International Travel: Changing APN

Hello:

Im traveling internationally and called Verizon to have a SIM unlock. They said my S5 was already unlocked.

Can I just purchase the SIM card and the APN will update automatically? I tried to do add a new APN before I left but that button seems to be greyed out.

I have towelroot, so I should be able to add an APN?
 
In May I bought the S5 for 2 reasons. Moving from a flipphone and I was going to Italy. All I did was sign up for the international data plan. While there I was able to use wi-fi most of the time. Calls were no problem. When I got back I cancelled the data plan.
 
I'm leaving for a Caribbean cruise next month so a call to Verizon was on my "to do" list. I don't know what an APN is but I did just call and ask about an international data plan (not one for that part of the world). Then asked about a texting plan. There isn't one. All outbound texts would be 50 cents and inbound are 5 cents. Calls made while at the various islands were as high as $2.80/min :o
