Lol well I had to do it manually the first time but now since I backed it up with Samsung Cloud it does it for me if I ever reset or something

You can change it up to 9 in the Home Up module if you have Goodlock/Nicelock installed.
Under Home Screen there's an option of Favorite Max Count

Showing labels or not can be an individual option in some themes and icon packs and not necessarily the launcher.

Yes you can on NIAGARA launcher.
